Application of Molecular Distillation in Food Processing

1.Refining Aromatic Oils

With the rapid development of industries such as daily chemicals, light industry, and pharmaceuticals, as well as foreign trade, the demand for natural essential oils has been steadily increasing. The main components of aromatic oils are aldehydes, ketones, and alcohols, most of which are terpenes. These compounds have high boiling points and are heat-sensitive. During traditional distillation processing, the long heating time and high temperatures can cause molecular rearrangement, oxidation, hydrolysis, and even polymerization reactions, which can damage the aromatic components. By utilizing molecular distillation under different vacuum levels, various components can be purified, and colored impurities and unpleasant odors can be removed, ensuring the quality and grade of the essential oils. Additionally, essential oils such as jasmine and grandiflora jasmine produced by molecular distillation have a very rich, fresh aroma, with their characteristic scent being particularly prominent. 

2.Purification and Refining of Vitamins

As living standards rise, people’s demand for health supplements has increased. Natural Vitamin E can be sourced from vegetable oils (such as soybean oil, wheat germ oil, rapeseed oil, etc.) rich in Vitamin E or their deodorized distillates and soapstock. If vegetable oils are used as raw materials, the cost is high, and the yield is low. If deodorized distillates and soapstock are used, the cost is lower, but the complex mixture of components in these materials makes purification difficult, posing a significant technical challenge. Since Vitamin E has a high molecular weight, a high boiling point, and is heat-sensitive, it is prone to oxidation. Ordinary distillation methods are unable to produce products of sufficient quality to compete in international markets. Therefore, molecular distillation is a better method for the concentration and refinement of natural Vitamin E. 

3.Extraction of Natural Pigments

Natural food colorants, due to their safety, non-toxicity, and nutritional value, are becoming increasingly popular. Modern scientific research has shown that carotenoids and other natural food colorants are essential sources of vitamins, with antibacterial properties and the ability to prevent and treat diseases. Traditional methods of extracting carotenoids include saponification extraction, adsorption, and ester exchange methods, but issues such as residual solvents have impacted product quality. By using molecular distillation to extract carotenoids, the resulting product is free from foreign organic solvents, and the color value of the product is very high. 

4.Removal of Cholesterol

Cholesterol content is an indicator of whether a person is at risk of cardiovascular disease. A small amount of cholesterol in the human bloodstream is crucial for health as it is used to form cell membranes, hormones, and other necessary tissues. Cholesterol is present in animal fats like lard, and since animal fats are part of everyday diets, excessive consumption can lead to health issues. By applying molecular distillation technology, cholesterol can be successfully removed from animal fats, making them safe for consumption, while not damaging heat-sensitive substances such as triglycerides, which are beneficial to human health.
